Family farms, guest ranches, and dude ranches make great getaways: with horseback riding and other fun activities; kids programs, at many places; pricing that includes meals.
You can find dude ranches across the US, in Canada, and 'round the world but Colorado has its own unique mountain wilderness.
Lots of ranches cater to families, with children's programs even for very young kids.
For example, the Historic Pines Ranch offers an "Awesome Children's program that includes, children's riding, rodeo, story telling with Mountain Man, Indian Dancers, nature hikes, playhouse, and a full time children's counselor."
The Drowsy Water Ranch has "programs for children from infants to teenagers with plenty of activities for parents and grandparents alike."

- Ranchweb.com - though not specific to Colorado-- is excellent for finding types of places such as Dude Ranches with Kids Camps, Resort Ranches, etc.
