This might sound weird, but I stack up in the front seats with everything from toys to water bottles to random chew toys and shiny things that are, of course, safe for my 6 month old and hand it to her while I’m driving. I have a car small enough to be able to reach that darn rear-facing car seat. She gets happy for a minute with one thing and throws it away after another, but whatever works, right? LOL
